Ingredients
Core
- Vegetable broth
- Miso paste (white or yellow)
- Tofu cubes
- Scallions, sliced
Add-Ins
- Mushrooms, sliced
- Spinach or bok choy
Instructions
Heat Base
- Bring broth to a gentle simmer.
Add Veg
- Add mushrooms and greens; cook 2–3 minutes.
Miso In
- Dissolve miso in small amount of hot broth.
- Stir into pot (do not boil).
Serve
- Add tofu and scallions.
- Serve hot.

- Never boil miso — it kills flavor.
- Add sesame oil for richness.
- Add noodles to bulk it up.
