Ingredients

Core

  • Vegetable broth
  • Miso paste (white or yellow)
  • Tofu cubes
  • Scallions, sliced

Add-Ins

  • Mushrooms, sliced
  • Spinach or bok choy

Instructions

Heat Base

  • Bring broth to a gentle simmer.

Add Veg

  • Add mushrooms and greens; cook 2–3 minutes.

Miso In

  • Dissolve miso in small amount of hot broth.
  • Stir into pot (do not boil).

Serve

  • Add tofu and scallions.
  • Serve hot.

  • Never boil miso — it kills flavor.
  • Add sesame oil for richness.
  • Add noodles to bulk it up.
