Ingredients

  • Beef chuck, cubed
  • Onion, chopped
  • Carrots, sliced
  • Potatoes, diced
  • Garlic, minced
  • Beef broth
  • Tomato paste
  • Worcestershire sauce
  • Bay leaf
  • Thyme
  • Salt
  • Black pepper

Instructions

  1. Season beef and brown in pot.
  2. Remove and set aside.
  3. Sauté onion, garlic, carrots.
  4. Return beef.
  5. Add broth, tomato paste, Worcestershire, bay leaf, and thyme.
  6. Simmer covered 1½–2 hours.
  7. Add potatoes and cook until tender.
  8. Adjust seasoning.

  • Add peas at the end if desired.
