Ingredients

Core

  • Beef chuck, cubed
  • Onion, chopped
  • Carrots, sliced
  • Potatoes, diced
  • Garlic, minced

Liquids

  • Beef broth
  • Tomato paste
  • Worcestershire sauce

Seasoning

  • Bay leaf
  • Thyme
  • Salt
  • Black pepper

Instructions

Brown

  • Season beef and brown in pot.
  • Remove and set aside.

Build Base

  • Sauté onion, garlic, carrots.

Simmer

  • Return beef.
  • Add broth, tomato paste, Worcestershire, bay leaf, and thyme.
  • Simmer covered 1½–2 hours.

Finish

  • Add potatoes and cook until tender.
  • Adjust seasoning.

Overseer’s Notes

  • Improves overnight.
  • Add peas at the end if desired.
  • Freezes well.
