Ingredients
Core
- Beef chuck, cubed
- Onion, chopped
- Carrots, sliced
- Potatoes, diced
- Garlic, minced
Liquids
- Beef broth
- Tomato paste
- Worcestershire sauce
Seasoning
- Bay leaf
- Thyme
- Salt
- Black pepper
Instructions
Brown
- Season beef and brown in pot.
- Remove and set aside.
Build Base
- Sauté onion, garlic, carrots.
Simmer
- Return beef.
- Add broth, tomato paste, Worcestershire, bay leaf, and thyme.
- Simmer covered 1½–2 hours.
Finish
- Add potatoes and cook until tender.
- Adjust seasoning.
Overseer’s Notes
- Improves overnight.
- Add peas at the end if desired.
- Freezes well.
