Ingredients
- 2 tbsp canola oil
- 1 tsp sesame oil
- 2 tbsp fresh ginger, minced
- 3 garlic cloves, minced
- 170 g shiitake mushrooms, thinly sliced (6 oz)
- 680 g lean ground pork (1.5 lb)
- 180 g cooked jasmine rice (¾ cup cooked)
- 1 large carrot, shredded
- 4 scallions, chopped
- ¼ cup cilantro, chopped
- 1 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 large head Napa cabbage, leaves separated and trimmed
- ¼ cup hoisin sauce
- 2 tbsp water
- ½ tsp kosher salt
- ½ tsp black pepper
Instructions
- Activate the Filling: Heat canola oil and sesame oil in a skillet over medium. Add ginger, garlic, and mushrooms. Sauté 4–5 minutes until fragrant and softened. Remove from heat.
- Combine: In a large bowl, mix pork, cooked rice, carrot, scallions, cilantro, soy sauce, vinegar, salt, and pepper. Fold in the sautéed mushroom mixture.
- Prep the Leaves: Bring a large pot of water to a boil. Blanch cabbage leaves for 30–45 seconds until pliable. Pat dry.
- Roll: Place ⅓–½ cup filling near the base of each leaf. Roll tightly, tucking sides as needed. Place seam-side down.
- Glaze: Mix hoisin sauce and water. Brush lightly over the rolls.
- Instant Pot Method (Primary): Add 1 cup water to the pot. Place a trivet inside. Arrange rolls in a single layer (stack if needed). Pressure cook HIGH for 12 minutes. Natural release 5 minutes, then quick release. Optional: Air fry or broil 3–4 minutes to caramelize glaze.
- Oven Method (Backup): Place rolls seam-side down in a baking dish. Cover loosely with foil. Bake at 375°F (190°C) for 30–35 minutes. Uncover last 5 minutes to caramelize.
- Air Fryer Finish (Optional): Brush lightly with glaze and air fry at 380°F (193°C) for 4–6 minutes until edges crisp.
