Ingredients

  • 2 lb pork shoulder or pork loin, cut into 1.5-inch chunks
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tbsp soy sauce (low-sodium)
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp ground ginger
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 red onion, cut into chunks (optional)
  • 1 bell pepper, cut into chunks (optional)
  • Pineapple chunks (optional, morale-boosting)

Instructions

  1. Whisk all marinade ingredients until fully blended.
  2. Add pork chunks to a zip-top bag or bowl.
  3. Pour marinade over pork, seal, and refrigerate for **at least 2 hours**, preferably overnight.
  4. Thread pork onto skewers.
  5. Alternate with onion, pepper, or pineapple if using.
  6. Preheat air fryer to **400°F**.
  7. Air fry skewers **10–12 minutes**, turning once halfway.
  8. Confirm pork is cooked through (145°F for loin; 165°F if you prefer extra margin).
  9. Rest 3 minutes before serving.
  10. Optional: brush lightly with leftover warmed marinade for shine (boil marinade first if reused).
