Ingredients
- 2 lb pork shoulder or pork loin, cut into 1.5-inch chunks
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp honey
- 1 tbsp soy sauce (low-sodium)
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp ground ginger
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 red onion, cut into chunks (optional)
- 1 bell pepper, cut into chunks (optional)
- Pineapple chunks (optional, morale-boosting)
Instructions
- Whisk all marinade ingredients until fully blended.
- Add pork chunks to a zip-top bag or bowl.
- Pour marinade over pork, seal, and refrigerate for **at least 2 hours**, preferably overnight.
- Thread pork onto skewers.
- Alternate with onion, pepper, or pineapple if using.
- Preheat air fryer to **400°F**.
- Air fry skewers **10–12 minutes**, turning once halfway.
- Confirm pork is cooked through (145°F for loin; 165°F if you prefer extra margin).
- Rest 3 minutes before serving.
- Optional: brush lightly with leftover warmed marinade for shine (boil marinade first if reused).
