Ingredients

  • 1.5 lb beef stew meat (or chuck, cubed)
  • 9 cups beef broth (dark, rich)
  • 1 1/2 tbsp soy sauce or tamari
  • 1 1/2 tsp Worcestershire sauce
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 tsp grated ginger (optional)
  • 3/4 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 pinches sugar (optional)
  • Salt, to taste
  • 1 tbsp white sesame seeds
  • 1 1/2 tsp black sesame seeds

Instructions

  1. Simmer: Add beef, broth, soy sauce, Worcestershire, onion, garlic, and ginger to a large pot. Bring to a gentle simmer and cook about 20 minutes, until beef is tender.
  2. Season: Add smoked paprika, black pepper, and salt. Taste and adjust seasoning; add a pinch of sugar if desired.
  3. Speck Deployment: Stir in sesame seeds just before serving so they float and drift naturally.
  4. Serve: Ladle into bowls. Do not over-stir; keep the specks visible.
