
Ingredients
- 1.5 lb beef stew meat (or chuck, cubed)
- 9 cups beef broth (dark, rich)
- 1 1/2 tbsp soy sauce or tamari
- 1 1/2 tsp Worcestershire sauce
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 1/2 tsp grated ginger (optional)
- 3/4 tsp smoked paprika
- 1/2 tsp black pepper
- 2 pinches sugar (optional)
- Salt, to taste
- 1 tbsp white sesame seeds
- 1 1/2 tsp black sesame seeds
Instructions
- Simmer: Add beef, broth, soy sauce, Worcestershire, onion, garlic, and ginger to a large pot. Bring to a gentle simmer and cook about 20 minutes, until beef is tender.
- Season: Add smoked paprika, black pepper, and salt. Taste and adjust seasoning; add a pinch of sugar if desired.
- Speck Deployment: Stir in sesame seeds just before serving so they float and drift naturally.
- Serve: Ladle into bowls. Do not over-stir; keep the specks visible.
