Ingredients
Core
- Black beans, drained and rinsed
- Diced tomatoes
- Corn
- Red onion, finely diced
- Bell pepper, diced
- Jalapeño, minced (optional)
Dressing
- Olive oil
- Red wine vinegar or lime juice
- Salt
- Black pepper
Finishing
- Fresh cilantro, chopped
Instructions
Combine
- In a large bowl, add beans, tomatoes, corn, onion, bell pepper, and jalapeño.
Dress
- Whisk olive oil, vinegar or lime juice, salt, and pepper.
- Pour over mixture and toss gently.
Rest
- Chill 10–15 minutes before serving for best flavor.

- Great with tortilla chips or as a taco filling.
- Keeps well in the fridge for 2–3 days.
- Add avocado just before serving for extra richness.
