Ingredients

Core

  • Black beans, drained and rinsed
  • Diced tomatoes
  • Corn
  • Red onion, finely diced
  • Bell pepper, diced
  • Jalapeño, minced (optional)

Dressing

  • Olive oil
  • Red wine vinegar or lime juice
  • Salt
  • Black pepper

Finishing

  • Fresh cilantro, chopped

Instructions

Combine

  • In a large bowl, add beans, tomatoes, corn, onion, bell pepper, and jalapeño.

Dress

  • Whisk olive oil, vinegar or lime juice, salt, and pepper.
  • Pour over mixture and toss gently.

Rest

  • Chill 10–15 minutes before serving for best flavor.

  • Great with tortilla chips or as a taco filling.
