Ingredients

  • Chicken (bones/carcass or thighs)
  • Onion
  • Carrots
  • Celery
  • Garlic
  • Bay leaf
  • Salt and pepper

Instructions

  1. Add chicken + aromatics to pot and cover with water.
  2. Bring to a gentle simmer; skim if needed.
  3. Simmer 90–120 minutes.
  4. Strain; season to taste.
  5. Cool and store.
