Ingredients
- Chicken (bones/carcass or thighs)
- Onion
- Carrots
- Celery
- Garlic
- Bay leaf
- Salt and pepper
Instructions
- Add chicken + aromatics to pot and cover with water.
- Bring to a gentle simmer; skim if needed.
- Simmer 90–120 minutes.
- Strain; season to taste.
- Cool and store.
