Ingredients

Core

  • 2–3 pounds chicken bones, wings, or carcasses
  • 10 cups water

Aromatics

  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed

Seasoning

  • 1 bay leaf
  • 1 tsp black peppercorns
  • Salt, to taste

Instructions

Load Reactor

  • Add all ingredients to a large stockpot.
  • Cover with water.

Simmer

  • Bring to a gentle boil, then reduce to low.
  • Simmer uncovered for 1½–2 hours.

Strain

  • Remove solids and discard.
  • Strain liquid through fine mesh.

Cool & Store

  • Let cool.
  • Refrigerate up to 5 days or freeze up to 3 months.

  • Freeze in 1-cup portions for fast deployment.
  • Skim foam early for a clearer broth.
