Ingredients

  • 1 box cornbread mix, such as Jiffy
  • 1 egg
  • 80 ml milk (1/3 cup)
  • 80 g corn (1/2 cup)
  • 55 g shredded cheddar cheese (1/2 cup)
  • 1 tbsp honey
  • 2 tbsp butter, melted

Instructions

  1. Preheat Oven: Heat oven to 400°F. Grease an 8x8 baking dish or cast iron skillet.
  2. Mix Batter: In a bowl, combine cornbread mix, egg, milk, corn, cheddar, honey, and melted butter. Stir just until combined.
  3. Bake: Pour batter into the prepared dish and bake 18–22 minutes, until golden and set in the center.
  4. Rest and Serve: Let rest 5 minutes before slicing. Serve warm with chowder, stew, or chili.
