Ingredients

  • 2 lb lean ground beef (90/10 preferred)
  • 2 large eggs
  • 3/4 cup breadcrumbs (or almond flour for lower-carb)
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 1/2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 2 tbsp milk or broth
  • 2 1/2 cups low-sugar marinara sauce
  • 1 1/4 cups reduced-fat shredded mozzarella
  • Fresh basil or parsley (optional)

Instructions

  1. Form: Preheat oven to 400°F (204°C). Line a baking sheet with parchment. Mix meatball ingredients, then form 22–26 evenly sized meatballs.
  2. Bake: Place on sheet and bake 18–20 minutes until browned and cooked through (165°F).
  3. Reactor Soak: Reduce oven to 375°F. Transfer meatballs to a baking dish, pour marinara over top, and sprinkle with mozzarella.
  4. Finish: Bake 10 more minutes until cheese is melted and bubbling.
