Brahmin Reactor Meatballs

Ingredients
- 2 lb lean ground beef (90/10 preferred)
- 2 large eggs
- 3/4 cup breadcrumbs (or almond flour for lower-carb)
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 1/2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 2 tbsp milk or broth
- 2 1/2 cups low-sugar marinara sauce
- 1 1/4 cups reduced-fat shredded mozzarella
- Fresh basil or parsley (optional)
Instructions
- Form: Preheat oven to 400°F (204°C). Line a baking sheet with parchment. Mix meatball ingredients, then form 22–26 evenly sized meatballs.
- Bake: Place on sheet and bake 18–20 minutes until browned and cooked through (165°F).
- Reactor Soak: Reduce oven to 375°F. Transfer meatballs to a baking dish, pour marinara over top, and sprinkle with mozzarella.
- Finish: Bake 10 more minutes until cheese is melted and bubbling.
