Ingredients
- 1.6 kg boneless, skinless chicken breast
- 1/2 onion, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 170 g tomato paste
- 1/2 cup apple cider vinegar
- 1 cup mustard
- 2 tsp liquid smoke
- 2 tsp sugar substitute (monkfruit or stevia)
- 3 tsp kosher salt
- 2 tsp black pepper
- 4 tsp garlic powder
- 6 tsp onion powder
- 6 tsp smoked paprika
- 1 tsp chili powder
- 2 large heads cauliflower, cut into florets
- 3 tbsp olive oil
- 1.5 cups shredded cheddar cheese
- 3/4 cup heavy cream
- 3/4 cup unsweetened almond milk
- 3 tbsp unsalted butter
Instructions
- Load the Reactor: Add sliced onion, garlic, and chicken broth to the Instant Pot.
- Season the Protein: In a small bowl, combine garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Pat chicken dry and coat evenly.
- Pressure Cook: Place chicken on top of the onions. Seal and cook on High Pressure for 15 minutes. Natural release for 10 minutes, then vent remaining pressure.
- Shred + Reset: Remove chicken and shred. Discard excess liquid, leaving about 1/4 cup. Return shredded chicken and onions to the pot.
- Activate the Sauce: Stir in tomato paste, apple cider vinegar, mustard, liquid smoke, and sugar substitute. Set to Sauté (Low) and simmer 5–8 minutes until thickened.
- Roast the Cauliflower: Toss florets with olive oil, salt, and pepper. Roast at 425°F (218°C) for 18–22 minutes until tender with crisp edges.
- Forge the Cheese Sauce: In a saucepan, gently melt cheddar, heavy cream, almond milk, and butter. Stir until smooth.
- Assemble the Ration: Fold roasted cauliflower into cheese sauce until evenly coated.
- Plate: Spoon mac into bowls and top with pulled chicken. Serve warm.
